This is another favourite of mine as its very easy to make!

Set the oven to 180 c

Use a 7inch tin, lined with baking parchment and greased. Sprinkle the inside with caster sugar and then flour to coat it and tip out excess.

Ingredients:

One pot of plain yoghurt (small, 5.5 oz)

Use the empty plastic pot as a measure for the remaining ingredients.

3 measures of self raising flour

1 teaspoon baking powder

2 measures of sugar

1 measure of vegetable oil

3 beaten eggs

The grated rind of half of a lemon

Method

Beat everything together until smooth!

Bake in the centre of the oven for about an hour.

It is best left in a tin for 2 - 3 days for the flavour to develop.
