Here's a genuine recipe I use for that scooped out pumpkin =========
Ingredients:
Pumpkin Red onion Sun dried tomatoes/ or purée Red peppers Double cream
What to do:
Scoop out and carve your Halloween pumpkin. Keep the nice fleshy bits and the seeds. Seeds can be baked in oven for about 10mins at 180/Gas 6
Heat olive oil in a large pot Fry some finely chipped red onion and garlic (I use lazy garlic) for 5 minutes until soft. Add the sun dried tomatoes/ purée tblspoon, 3 red peppers sliced and your pumpkin. Cook this for about 10 minutes, then add vegetable or chicken stock and bring to the boil. Reduce the heat and cook for 30 minutes.
Then bleep bleep blob it (blend it) until smooth then put back in pan to warm. Season as you wish depends on your taste.
Serve up in bowls and use the double cream to make a spiderweb pattern. Use a cocktail stick to drag out the pattern. If you want you can put the baked pumpkin seeds on top to look like flies.
Have it with crusty bread
This is a super soup that will last a few days, super yummy for cold days and fun for the kiddies to eat veg if they don't. And it's healthy.
