Ok, if you haven't tried a microwave mug cake you haven't lived. They are so easy and quick and delicious it's very bad for the waistline. But sometimes these things are necessary! Here's my fave recipe - I found it online a while ago but I've refined it.
~Chocolate Nutella Mug Cake~
-Four tablespoons of self-raising flour. -Four tablespoons of caster sugar. -One medium egg. -Three tablespoons of cocoa powder. -Three tablespoons of milk. -Three tablespoons of sunflower oil. -Three tablespoons of Nutella (or three tablespoons of chocolate chips if you're not a Nutella fan, but it won't be quite as gooey).
1) Combine all the dry ingredients in a large coffee mug and mix together. 2) Add the milk and oil, then stir in the egg. Make sure you mix it really well at this point to get rid of any lumps - I find a fork works best. 3) Add the Nutella and mix well - it's probably really thick and hard to stir now! This is good. 4) Microwave for 1.5-3 minutes, depending on your microwave. Mine is 800w and I like it done for just 1.5 minutes so its still quite gooey. After three minutes it becomes more cup-cakey in texture so it depends what you prefer. Don't panic if the cake starts to rise over the top of the mug - this is normal and it will collapse when the heat stops! 5) Eat straight from mug - it will be very hot in the middle so be careful!
