For two people 4 eggs 1 large carrot 3 medium sized broccoli flourettes A handful of sweetcorn Half an onion sliced & diced 1 bag of boil in bag rice
I am by no ways vegetarian, but its a healthy alternative to people looking for their daily dosage of protein.
To start Cut the carrot which ever way you likw as long as its not too big as it has to go in the omelette. Cut your broccoli flourettes and put the cut carrot and broccoli in a pan to boil. Then throw a splash of olive oil in a frying pan with half the diced onion. Whilst the veg boils, bring to the boil a pan of water and once the water has boiled throw the rice bag in and wait for about 10 minutes.
Whilst waiting wisk 2 eggs in a cup or jug. When the veg has boiled, drain it and put the veg in the frying pan with the onions. Now turn the heat on and cook you frying pan full of onion and veg. Add the sweetcorn too at this stage. When the onions have browned a little, pour the egg into the frying pan and leave to cook. At this stage add some seasoning I add black pepper, but you can add what you want. When the rice has boiled add this to the frying pan mixture. The egg should still be runny on top so the rice will sink. If it doesn't sink gently spread around the top. Once all this has cooked add some grated cheese, extra mature cheddar works best and serve with a salad garnish if you so desire.
