4 Beets - medium size 1 tablespoon virgin olive oil 1/2 tablespoon of white wine vinegar 20 mint leaves (fresh)
Take 4 medium sized beets and cook in boiling water until tender (not soft ) let them cool down and then cut in slices.
Place them in a bowl and drizzle the oil and vinegar over them.
Finally add 20 mint leaves torn into pieces over the top and mix in.
Voila !! It's done.
So simple. It is not my recipe but a great one. The flavours are very subtle so if you like beets you will love this !!! Enjoy :)
