Makes: 500g/ 1 1/4 lb
You will need:
•500g/1 1/4 lb / 2 1/2 cups caster (superfine)sugar
•15ml/1 tbsp tartaric acid
or citric acid
• 10-12 drops lemon or orange extract
• 1-2 drops colouring (optional)
Method:
1. Put the sugar into a food processor or blender and process or blend until the sugar is as fine as it possibly can be. This should take a few minutes.
2. Transfer to a bowl and add the tartaric or citric acid, lemon or orange extract and the food colouring, if using. Mix well.
3. Leave the powder to dry completely, preferably for a few hours, before storing in an airtight container.
4. Use the sherbet for dipping lollipops into or put a couple of teaspoons into a glass of ice water and stir, for a refreshing summer drink.
