I'm not an amazing cook, but I thought I'd share with you a super easy lunchtime recipe I discovered today!
Did you know that you can cook bacon by microwaving it? If you're gasping with shock now that I didn't realise this was possible, then I apologise!
Serves:1 Makes: 2 bacon rolls. Equipment: Microwave, Microwavable plate, some kitchen towel (the paper sort), a knife. Ingredients: A pack of bacon (your choice; I bought bacon medallions to save having to cut the fat off as I'm fussy!), a pack of White rolls (White bread if you like), and butter/margarine/ mustard/ ketchup or anything else you like with bacon!
Method: Put three sheets of paper towel on the plate. Then put two rashers of bacon on the plate, making sure they don't touch. Finally cover the bacon with another sheet of kitchen towel. Put the plate into the microwave and cook for 2-3 minutes (time will vary with microwave so keep checking!). A beautiful bacony smell will envelop the room. During this time you can spread your rolls/bread with the condiments you desire. When the bacon reaches your desired crispiness (you must keep checking as you can easily overcook it!), remove the plate from the microwave. Place a rasher into each roll and enjoy!
