The taste map most people learned in school (sweet at the tip, salty and sour at the sides, bitter at the back) is built on a mistranslation. A 1901 German study by D.P. Hanig found only subtle regional variation in sensitivity; a later American textbook hardened this into fixed, separate zones. Taste receptors for all five basic flavors are distributed across the entire tongue.
