Eggplant are so underrated, and yet so good for the body! They are packed with vitamins C, K and B. They contain loads of Potassium which can help treat allergies, Manganese which is an anti-oxidant, Phosphorous for healthy teeth and bones, they are low in cholesterol and contain dietary fibre which is great for weight loss. A lot of people I know here is the UK (including my younger siblings) refuse to eat them but with this recipe they don't even know its eggplant :p so let's get to it!
Ingredients: 1 large eggplant Breadcrumbs 1 egg Salt Olive oil (for frying) Oregano Chilly (optional) Basil And other herbs to taste
Cut the eggplant in 2 half vertically and boil them until VERY soft. Let them cool and peel them. Press them in a bowl and break them up with your hands until they are like a mixture. Add salt, egg, herbs and chilly (if you are using it) and some breadcrumbs. Mix it all up and keep adding breadcrumbs unril the mixture is more solid then liquid but not too solid, take some and shape it in your hands, I sometimes do them like small meat balls or just flat disks. Do this for all of it. Coat them in breadcrumbs and fry until golden brown. Enjoy!
