Ingredients: Decaf coffee (I have kids in the house and caffeine is unhealthy, but if there are no kids around then bring it!!) Sponge biscuits ( about 2 large packets) 500g Mascarpone cheese 3 eggs separated 5tbs of Sugar Chocolate chips (as many as you like) Grated milk chocolate

Bring mascarpone to room temperature Make a pot of coffee and set if aside to cool In an electric mixer beat the egg whites until fluffy, Beat egg yolks (orange) with sugar Fold mascarpone with egg whites Combine it with egg yolks until smooth and creamy (spreadable)

Quickly dip biscuits into coffee and lay them on your chosen dish, cover with mascarpone mixture and sprinkle a few chocolate chips. Keep doing this until you have several layers and have run out of ingredients. Top with mascarpone mixture, pour chocolate dust freely on to and add as many chocolate chips as you want. Put it in the fridge to cool and enjoy it on a hot summer day ( or like I do... ANYTIME) :)
