This curry is my favourite, it's simple, quick to make and tastes out of this world! Don't be afraid of the amount of garlic, it needs a large amount to produce the correct intended flavour of this curry. Enjoy it! I've never known one person to not like it.
Ingredients/prep: Chicken breasts, chopped according to your personal preference, 1 ripe mango, peeled and chopped into small chunks, 8 cloves of garlic, peeled, crushed and coarsely chopped, 5" grated root ginger, Green chillies, sliced (as many as you like. Or none if you don't like it too spicy). 5 tsps curry powder, 1 glass of white wine 5 tbs veg. Oil
Method: i) Heat up oil in a large pan. ii) Add the curry powder to the hot oil and stir around for 10-20 seconds (don't let it burn). iii) Add the chicken, seal on all sides. iv) Add the mango, stir fry for 5 minutes. It should start to turn more gloopy. v) Add - garlic, ginger, white wine. vi) Stir in well and cook for about 15 minutes. vii) Add the chillies and cook for a further 5 minutes. viii) Done. Serve up with rice or naan bread or whatever you like.
