1.5-2 cups raw, peeled shrimp: grind in food processor 3 Pork chop (2 cups pieces—grind) so it's a little more than the shrimp 1/3 cup chopped onion 1 cup carrots-chop in food process 3/4 cup Vermicelli (soak 30-45 minutes), chopped Mix all above ingredients together
1 egg, beaten 1 heaping tablespoon Tony Chachere's original creole seasoning- beat into egg Add to mixture and adjust seasoning to taste
Spring roll pastry sheets: wet sides with fingers and place spoonful of mixture inside; wrap tight like a burrito (start with diamond shape)
Fry egg rolls in vegetable oil in a deep pan (just enough oil to cover the egg rolls) until golden brown and delicious.
