St George was a Christian in the Roman army at a time when it wasn't really very fashionable. He was therefore tortured in order to make him renounce his faith. However, he refused to renounce his god and actually survived. The dragon he defeated was not in actual fact a real dragon (they didn't exist in the middle east at that time-I think they were more native to northern Europe), but a metaphor for the devil.
